The Food of The Oliver Inn

There’s nothing like a homemade breakfast, and the owners of The Oliver Inn Bed + Breakfast in South Bend know that better than anyone. Tom and Alice Erlandson have owned The Oliver Inn since August 2005, and have quickly become a go-to source for freshly made, and extra delicious, breakfasts for any occasion. In addition to creating gourmet breakfasts for their guests, Alice Erlandson delights patrons of Tippecanoe Place Restaurant with her scrumptious desserts. Here is one of her popular breakfast recipes:

 

Banana Bread

  • 1 stick of margarine
  • 1 cup of sugar
  • 2 eggs
  • 3 very ripe bananas
  • 1 ¼ cups flour
  • ¾ tsp baking soda
  • ½ tsp salt

Grease loaf pan. Preheat oven to 350. Cream margarine and sugar until fluffy. Add eggs and beat well. Stir in bananas. Mix in dry ingredients. Pour into greased loaf pan and bake 30-40 minutes until tooth pick comes out clean.
